Tarator with Yoghurt

Ingredients for 5 servings:

  • 2 cucumbers (500g)
  • 1 yoghurt cup
  • 2-3 garlic cloves
  • 6-7 sprigs of dill
  • 1 teaspoon of salt
  • 6 tablespoons of cooking oil
  • 50g walnuts
  • 1 tablespoon of wine vinegar
  • Ground black pepper to taste

Preparation:

  1. Peel the cucumbers, then chop them into small pieces or grate them using large grater, and put them in a deep bowl.
  2. Peel the garlic and crush it a wooden bowl together with a pinch of salt and 1 tablespoon of the cooking oil, and put it with the cucumbers. Season with the finely chopped dill, the salt and the ground black pepper, put the vinegar and the cooking oil, and mix it together.
  3. Whisk the yoghurt in another bowl and gradually add 1l cold water. Put the mixture with the cucumbers and mix it together.
  4. Roast the walnuts in a dry pan, and then crush or grind them.
  5. Cool the Tarator before serving and sprinkle it with the walnuts.
