Pizza with Kashkaval and Olives

Ingredients for 1 pizza:

  • 1 small onion
  • 30-40g olive oil
  • 1-2 handfuls of olives (without pits)
  • 250g Kashkaval cheese
  • Fresh thyme
  • Salt to taste
  • Cooking oil to grease the pan

For the dough:

  • 300g of flour
  • 120-130g of butter
  • 2-3 tablespoons of water

Preparation:

  1. Sauté the sliced onion in the olive oil on a slow fire until it becomes golden in color.
  2. In the meantime sift the flour and put it in the kitchen mixing bowl. Add the butter and mix it together for half a minute add water and mix again until the dough resembles large crumbs. Then take it out of the bowl knead it to form a ball.
  3. Roll the dough out in a sheet with a diameter greater than that of the baking pan. Roll the sheet around the rolling pin and spread it out on the greased pan. Press it tightly to the pan and make holes using a fork so it does not rise. Bake in a moderate oven for 15-20 minutes until it becomes golden in color.
  4. Season the onion with the salt and mix it together with the olives and the thyme. Spread the mixture on the baked dough, sprinkle the grated Kashkaval and bake until the Kashkaval melts to golden colour
