Red Pepper white brine cheese filling

Ingredients for 2 servings:

  • 1 Red pepper the elongated variety
  • 200 grams white brine cheese
  • Fresh mint
  • Fresh aneth
  • 2 tablespoons of yoghurt
  • Olive oil
  • Salt and paprika to taste

Preparation:

  1. Slice the red pepper in half and remove seeds, wash and drain off excess water. Place under a hot grill in order to remove skin and to soften the red pepper this will bring out the full flavor.
  2. Crumble the white brine cheese in a bowl, sprinkle with olive oil and chop both a few mint leaves and a small bunch of aneth, add one tablespoon of yoghurt and a little paprika for taste.
  3. Mix the white brine cheese mixture well and spoon into the red pepper halves that have been prepared.
  4. Finish with a little yoghurt on the top.
  5. Refrigerate and serve cool for a healthy snack or accompaniment to any meal.
