Kashkaval Schnitzel

Ingredients for 3-4 servings

  • 500g Kashkaval
  • 2 eggs
  • 2 cups of semolina
  • Flour to coat
  • ½ tsp basil
  • ½ tsp thyme
  • ¼ tsp ground red pepper
  • Ground black pepper to taste
  • ½ cup of olive oil to fry

Preparation:

  1. Mix the semolina and the spices, and then whisk the eggs.
  2. Leave the Kashkaval cheese to cool properly and cut it into slices. Dip each slice in ice-cold water, then coat in flour patting off excess to avoid burning when frying. Dip the slices in the beaten eggs, coat in the semolina mixture and finally fry in the olive oil until golden brown.
  3. Remove from the pan and transfer to a plate lined with kitchen paper to drain excess olive oil.

Serving tip: Slice the Kashkaval into finger strips as an appetizer.
