Banitsa with White Brine Cheese

Ingredients for a square or round baking tray of Banitsa (serves 6):

  • 1 package prepared Filo pastry (400g)
  • 1-2 tablespoons of cooking oil
  • 125g butter

For the filling:

  • 200-300g white brine cheese
  • 1 cup of yoghurt
  • 3 eggs
  • Salt and ground white pepper to taste

Preparation:

  1. Grease the baking pan in which you will bake the Banitsa with the cooking oil and some of the butter.
  2. Make the filling in a separate container by mixing together the yoghurt, the beaten eggs and the crumbled cheese.
  3. Grease each separate sheet of the filo pastry with the melted butter and put filling on every third sheet. Cut it into 6 or 8 pieces.
  4. Bake in an oven preheated to 180 degrees until it becomes golden in color
  5. Serve the Banitsa warm
