Baked White Brine Cheese

Ingredients for 4 servings:

  • 800g white brine cheese
  • 150g butter
  • 1 small onion
  • 2 red peppers
  • 4 eggs
  • Salt and ground white pepper to taste
  • Basil leaves parsley and cherry tomatoes for garnish

Preparation:

  1. Grease one or four individual earthenware pan(s) with butter, then using half of the white brine cheese put equal parts cut into thick slices in the pan(s). Put thin slices of onion on top and then the remaining white brine cheese.
  2. Roast the peppers in a dry pan, on a hot-plate or in the oven, and put them in a container with a lid, let them steam for a while and then peel them. Remove the seeds and cut them into thin strips. Put them on top of the other ingredients in the pan(s), make small well holes and crack an egg in each of the prepared wells.
  3. Bake the earthenware pan(s) in an oven preheated to 200 degrees for 5-7 minutes.
  4. Serve the Baked white brine cheese warm, seasoned with salt and ground white pepper and garnish with chopped basil, parsley and cherry tomatoes.
